Until I tried cracked chicken, I didn’t know what the hype was about. Now I want to make all things crack chicken including the pasta version. I prefer Parmesan cheese instead of cheddar, but you can substitute the cheese of choice.
Crack Chicken Pasta
- 4 c chicken broth
- 1/2 c water
- 1 lb rotini pasta (uncooked)
- 1 tbsp dry ranch mix
- 2 chicken breasts (cut into 6-8 strips )
- 1 c bacon bits
- 1 c Parmesan cheese
- 8 oz cream cheese
Add the chicken broth, water and pasta to the pressure cooker. Make sure most of the pasta is covered with liquid.
Place the chicken on top.
Pressure cook in HIGH for 8 minutes and allow a 6 minute NPR.
In a medium bowl, combine the cream cheese, dry ranch, bacon bits and Parmesan cheese.
Remove the cooked chicken, shred and add to the cream cheese mixture.
Stir the pasta in the pressure cooker and then add in the shredded chicken mixture. Stir lightly tossing, scoop into bowls and enjoy!
