A quick and easy Instant Pot chicken scampi over perfectly cooked buttery, garlic noodles.
Chicken Scampi reminds me of Olive Garden when my husband and I were dating. It was our Valentine’s Day go to restaurant. Now, three kids later I make dishes like this more at home, haha! Much less expensive as well.
Chicken Scampi Ingredients:
chicken strips, garlic cloves, peppers, onion powder, Italian seasoning, white wine or apple juice, heavy cream, shredded parmesan, and think spaghetti pasta
How to make Instant Pot Chicken Scampi
First, place your chicken strips into the bottom of the Instant Pot. Add garlic and onion powder. Then add white wine or apple juice and seasonings.
What about the peppers?
Add pasta and just enough water to nearly cover your pasta. Add in your sliced peppers on top unless you want them more al dente, then add them in with the heavy cream.
Turn up the heat
Pressure cook for 9 minutes with a 6 minute NPR. Once complete, place pot on saute and add heavy cream to allow thickening for 2-3 minutes. Garnish with Parmesan cheese. Enjoy!
