This family-friendly delicious instant pot chicken cordon bleu recipe can be ready in a snap. It’s really a simple meal all in one that’s perfect for a weeknight meal.
What is the PIP, Pot in Pot method of cooking?
When cooking a thicker meal such as this one or chili, you can use the PIP method of cooking. It allows you to cook without your meal being overly saturated with too much water or liquid. You will not receive the dreaded “burn” notice with this method either.
As you can see in the picture below, I use a 3qt pot inside the 6qt. However, in order to do this I put 1 cup of water in the bottom of the 6qt pot, then place the trivet inside with the 3qt pot on top. I fill the 3qt with all the ingredients. Pot in Pot method is used because this is a very thick meal that can give you a burn notice easily if not using the PIP method. Purchase this 3qt insert for under $12 and it works great especially for meals such as this one. This is the non-stick inner cooking pot. Grab the stainless steel one for under $20.
When using the PIP method, it takes a bit longer to cook your food thoroughly. With this recipe, 27 minutes with 10 minutes NPR worked perfectly using the non-stick insert.
Chicken Cordon Bleu Ingredients:
boneless skinless chicken breasts
cream of chicken soup
milk
dried minced garlic
ham
Swiss cheese
cornbread Stove-Top stuffing
butter
How to make Instant Pot Chicken Cordon Bleu:
1. Cut the chicken breasts into strips and place the chicken in the Instant Pot. (I used the PIP method for this recipe since it is using thick ingredients.)
2. Put the ham over the chicken in layers.
3. Mix together the cream of chicken soup, water, milk, and garlic in a small bowl. Pour on top and spread it evenly.
4. Sprinkle over the cornbread stuffing mix.
5. Pour the butter all over the stuffing.
6. Pressure cook for 20 minutes with a 10 minute NPR. (This is the time needed using the PIP method.)
7. Open the lid and place cheese on top and let melt.
8. Scoop out into bowls and enjoy!
