These buffalo chicken quesadillas can be served as a main meal for dinner or lunch. They also make a great party food as you can make a large batch easily for football night or birthday party.
Buffalo chicken quesadillas Ingredients needed:
1-2 lb chicken tenders
1 jar buffalo sauce
2 c chicken broth
8 oz cream cheese
1-2 c shredded Mexican cheese
Tortilla shells
How to make Buffalo Chicken Quesadillas:
Add the chicken tenders to the Instant Pot followed by the buffalo sauce and chicken broth. Pressure cook for 20 minutes with a 5 minute natural pressure release. Shred the chicken and add in the softened cream cheese and shredded Mexican cheese. Mix until well combined. Scoop onto a taco shell, and smooth out flat. Place another taco shell on top. Fry in a pan on medium heat both sides until complete.
