Buffalo chicken pasta would be perfect for a weeknight meal or even a gathering of friends and family. It’s really quick and easy and a meal all in one. It will have a bit of a kick to it because of the buffalo sauce. Mild, medium or hot sauce can be used at your preference.
You can have this easy and delicious meal on your dinner table in 30 minutes. Combining buffalo chicken and cheesy pasta in one pot creates a meal that everyone will enjoy.
These are items you may have already on hand, or be able to grab quickly at the grocery or ordering online. I always keep rotini pasta and chicken broth in the pantry and Mexican cheese in the refrigerator. Those are just staples we use in several meals.
This dish reminds me of buffalo chicken dip only a little thicker and more hearty. We add a few bacon bits on top for that extra indulgence.
Ingredients needed to make Buffalo Chicken Pasta
2 large chicken breasts – sliced
16 oz pasta
1 c buffalo sauce
8 oz cream cheese
1 c Mexican cheese
3 c chicken broth
Bacon bits
How to make Buffalo Chicken Pasta
1. Add chicken to the Instant pot.
2. Add broth, sauce, and pasta on top. Push the pasta until most is under the liquid.
3. Pressure cook for 8 minutes with an 8 minute NPR.
4. Remove chicken only to shred and then add back in and stir.
5. Add cream cheese and Mexican cheese and stir until well combined.
6. Scoop into bowls and add some bacon bits on top, enjoy!
