Fall is the time to celebrate with all things pumpkin! My family loves pumpkin pie in our house. What I love about these pumpkin pie bites is that they are just the right size to go behind any meal. Whether you have kids with little hands or you just want something sweet that’s not too heavy, these are for you.
WHAT TYPE OF EGG BITE MOLD DO I NEED?
You will need an egg bite mold for your Instant Pot for these recipes. I recommend one that has a silicone lid. If you have one with a silicone lid, then you can put it in the Instant Pot. If yours is plastic, it cannot go in the Instant Pot. Lightly place the lid on them mainly to keep the moisture out.
I recommend a heavy duty egg bite mold with a silicone lid. It can be used for numerous recipes. It is important to have one that is heavy duty because your items will come out better. I still use avocado oil or cooking spray before putting anything in them.
These Egg Bite Molds on Amazon from the Insta Extras are premium quality, comes in a 2 pack and includes a plastic and silicone lid. I am not endorsed by them, they are just ones that I recommend that I have found to be among the best at a reasonable price.
CAN I PUT THE LID OF MY EGG BITE MOLDS IN THE INSTANT POT?
Yes, only if it is made of silicone. The egg bite mold is made of silicone, so if your lid is also made of that, you can put it in the Instant Pot. I recommend lightly putting the lid on your egg bite molds because it is mainly used to keep all the moisture out.
I prefer using it over foil. If you have a plastic lid, it can only be used for storage such as freezing items such as baby food.
HOW DO I KNOW IF MY LID IS PLASTIC OR SILICONE?
If your lid will bend over and touch the other side easily, then it is silicone. If it is stiff and not bendable, then it is plastic.
Can I use fresh pumpkin?
For these pumpkin pie bites, you can use canned pumpkin or your own fresh pumpkin puree. It’s a small recipe that doesn’t require much pumpkin, so if you’re only making the bites, it’s probably best to just buy a small can of pumpkin puree.
Can I make Instant Pot Pumpkin Pie Bites without a crust?
Yes! You can make them with crushed ginger snaps as a crumbly crust, with golden Oreo thins and without any crust at all.
The flavors are extraordinary with the ginger snaps. The Oreo thins are perfect because they fit perfectly in the mold and just make it even more easier! These both add that bit of sweetness that adds to the bite. If you don’t want a crust at all, that works, too! It just makes them a little harder to pick up and eat with your hands.
How to make Instant Pot Pumpkin Pie Bites:
- In a bowl, whisk together graham crackers and melted butter and put in the egg bite mold.
- Mix the pumpkin, milk, salt, spice, eggs and sugar and pour evenly into the greased compartments of the egg bite mold.
- Add a cup of water to the IP.
- Cover with silicone lid or foil. Cook for 40 minutes with NR.
TIP: the bites will rise up and puff out of the molds just a bit, but that is what they are supposed to do. As soon as you place the mold in the refrigerator or freezer to chill, they drop back down.
Don’t try to transfer them to a different plate while they are still warm, or you’ll have a mess on your hands. Just let them chill and settle and you’ll have nice little domes of pumpkin pie.

Instant Pot Pumpkin Pie Bites

Ingredients
- 6 tbsp graham crackers (crushed)
- 4 tbsp butter (melted)
- 2 eggs
- 15 oz canned pumpkin
- 12 oz evaporated milk
- 1/2 c sugar
- 2 tsp pumpkin pie spice
- 1/2 tsp salt
Instructions
- In a small bowl whisk together crushed graham crackers and melted butter. Divide evenly among the 2 egg bite molds.
- In a medium bowl, mix together pumpkin, milk, salt, pumpkin pie spice, eggs, and sugar. Pour into compartments filling them about halfway.
- Add a cup of water to the Instant Pot. Place a trivet in the bottom with the two egg bite molds covered.
- Pressure cook for 40 minutes with a Natural Pressure Release.
- Remove and chill in the refrigerator for about 3-4 hours to help remove easier from the mold.
