I’ve always loved this recipe of simple Salisbury Steak meatballs with creamy mashed potatoes and gravy. We’ve made this dish for dinner multiple times and loved it every time.

Many items for the recipe are pantry staples that you may already have on hand. This is a one pot meal, meaning you can cook everything together including your potatoes in the Instant Pot at once. You can easily double the recipe if you want more meatballs.
This recipe uses a steamer basket for the potatoes, you can also make this recipe without the basket. This is the basket that I use. I use this often for veggies, potatoes, eggs and more.
Items needed to make Instant Pot Salisbury Steak Meatballs and Potatoes:
Ground beef, condensed French onion soup, egg, seasoned bread crumbs, potatoes, beef broth, Worcestershire sauce, butter, milk and cornstarch (this helps thicken the gravy).
How to make Salisbury Steak Meatballs and Potatoes:
1. Mix the ground beef, 2-3 tbsp. of French onion soup, egg, bread crumbs, salt and pepper.
2. Form into tight meatballs.
3. Turn the Instant Pot onto Saute’, add 2 tbsp of butter. Once melted, add in enough meatballs to cover the bottom. Saute’ all over until all meatballs have been browned.
4. Add in the beef broth and deglaze the bottom with a wooden spoon. Then add in the Worcestershire sauce with the meatballs on top.
5. Lastly, pour in the remaining French onion soup.
6. Place a steamer basket on top with the chopped potatoes inside.
7. Pressure cook for 5 minutes with a Natural Pressure Release.
8. Remove the potatoes and mash them with butter, milk, salt and pepper.
9. Mix together cornstarch and water and add into the Instant Pot. Stir until thickened, or saute’ until thick.
10. Serve meatballs over mashed potatoes with gravy on top. Enjoy!

- 6-7 medium potatoes
- 2 c beef broth

- 1 tbsp cornstarch
- salt and pepper to taste
