This is such an easy recipe that taste’s just like Grandma’s! And the best part? They’re even easier to make using the Instant Pot and a perfect crumble topping!
Want to use fresh peaches? You can definitely do that in the recipe as well especially during peach season. Do you guys love fresh, in season fruit and veggies and all the delicious things? These Peach Muffin Bites are absolute perfection during peach season, but they’re even delicious made with canned peaches! If you use canned peaches for this recipe, just be sure to drain the peaches before using. If you’re using fresh peaches, they work with or without the peel, but I prefer without the peel.
WHAT TYPE OF EGG BITE MOLD DO I NEED?
You will also need an egg bite mold for your Instant Pot for this recipe. I recommend one that has a silicone lid. If you have one with a silicone lid, then you can put it in the Instant Pot. If yours is plastic, it cannot go in the Instant Pot. Lightly place the lid on them mainly to keep the moisture out.
I recommend a heavy duty egg bite mold with a silicone lid. The egg bite mold can be used for numerous recipes. It is important to have one that is heavy duty because your items will come out better. I still use avocado oil or cooking spray before putting anything in them.
These Egg Bite Molds on Amazon from the Insta Extras are premium quality, comes in a 2 pack and includes a plastic and silicone lid. I am not endorsed by them, however they are just the ones that I recommend that I have found to be among the best at a reasonable price.
CAN I PUT THE LID OF MY EGG BITE MOLDS IN THE INSTANT POT?
Yes, only if it is made of silicone. The egg bite mold is made of silicone, so if your lid is also made of that, you can put it in the Instant Pot. I recommend lightly putting the lid on your egg bite molds because it is mainly used to keep all the moisture out.
I prefer using it over foil. If you have a plastic lid, it can only be used for storage such as freezing items such as baby food.
HOW DO I KNOW IF MY LID IS PLASTIC OR SILICONE?
If your lid will bend over and touch the other side easily, then it is silicone. If it is stiff and not bendable, then it is plastic.
Instant Pot Peach Muffin Bites Ingredients
flour
baking powder
salt
cinnamon
brown sugar
egg
oil
canned peaches
milk
vanilla
How to make Peach Muffin Bites
1. Combine flour, baking powder, salt cinnamon and brown sugar in a bowl.
2. In a separate bowl combine egg, oil, peach juice, milk and vanilla.
3. Mix wet ingredients into dry ingredients and add chopped peaches.
4. Stir muffin batter just until peaches are mixed into batter.
5. Sprinkle brown sugar in the bottom of each egg bite mold. Scoop mixture filling the mold halfway.
6. Pour 1 cup of water in the bottom of the Instant Pot. Place egg bite mold on the trivet. Pressure cook for 14 minutes with a natural pressure release.
7. Allow muffins to cool slightly and then remove from the mold.
8. Bite in and enjoy!

Ingredients
- 1 cup water
- 1 cup flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup brown sugar
- 1 egg
- 1/4 cup oil
- 1/4 cup peach juice (from canned peaches)
- 1/4 cup milk
- 1/4 teaspoon vanilla
- 1/2 cup canned peaches (chopped)
- Topping
- brown sugar
Instructions
