Easy Cheesy Chicken Enchilada Pasta…all the flavors of beef enchiladas but in pasta form! It’s a perfect 30 minute pasta recipe for busy week nights! One of my favorite things to cook in the Instant pot is pasta in some form or another.
This Enchilada Pasta is a delicious meal with so much flavor. It is easy enough for a weeknight dinner and a nice change up to the usual spaghetti night. If you love enchiladas but don’t have much time, you will appreciate this meal.
This is a great budget friendly meal! I’m always looking for a meal that will save money but still taste amazing, and this is one of those! Instant Pot meals are also great for turning meals into one-pot dishes that cook in minutes. I’m all for less dish washing, anyone else?
Can I substitute any ingredients?
You can substitute ground beef or turkey in the place of the chicken. You can use spicy Pepper Jack or other cheese to kick it up a notch. Use either mild or spicy red enchilada sauce. Don’t like rotini pasta? Pick your favorite kind of pasta or whatever you have on hand!
INGREDIENTS NEEDED:
4-5 chicken tenders
2 cups rotini
1 Tbs chili powder
10-oz can enchilada sauce
1 1/2 Tbsp taco seasoning mix
2 c chicken broth
1/2 c of water if needed
1 can black beans, drained
1 1/2 c shredded cheddar cheese
Pour the chicken broth into the pressure cooker. Add rotini pasta, chili powder, taco seasoning, enchilada sauce, black beans and chicken tenders on top without stirring. Seal and set pressure cooker for 6 minutes with a 6 minute NPR. Once complete, shred the chicken and stir back in. Add the shredded cheese and stir in, enjoy!
