Instant Pot Breakfast Egg Sandwiches made in mini tart molds are the perfect start to your day.
I’m so excited for the latest recipe for the Instant Pot! These breakfast sandwiches are so easy to make! You can create your own any way you like.
Along with your eggs, milk, and cheese you can choose the toppings of your choice. We love bacon, however you could also add in sausage, ham, mushrooms, chives, spinach, peppers, onions, or other ingredient. In other words, the possibilities are really endless.
Make sure to add a cup of water to the bottom of your Instant Pot before placing the trivet inside. Then you can just stack and layer diagonally around, put the lid on top and pressure cook for 5 minutes. Detailed directions are below.
So easy and so much cheaper than the box breakfast sandwiches that you can get in the freezer section. Also, healthier without the added preservatives. Therefore, let’s begin!
Where can I find the molds?
I used these Wilton Mini Tart Molds. They are the perfect size to fit on your bagel, and they even come in a pack of 12. I usually do not put more than 6 in the Instant Pot. Depending on the size of your Instant Pot, you could put as many as you want up to the line.
Wilton Mini Tart Molds are heavy duty and great for filling with the egg mixture. I usually spray with cooking spray, but I forgot once and they still popped right out.
Can I make these ahead of time?
Yes! You can make them for the week and freeze. Just reheat in the microwave for about one minute. When freezing, I would wrap them separately and then put in a container or freezer bag for maximum freshness. I like to make these on Sunday and then just pop them into the microwave throughout the week. You can easily make a variety for different family members, for instance you could label them on the parchment paper before slipping them into the freezer bags.
My husband likes these and it’s quick when we are in a hurry which seems like always!
What type of bread do I use?
You could use biscuits, crescents, sourdough or our favorite which is the Thomas whole grain bagels. I usually get these at Wal-Mart or Kroger, but they can be found at most grocery stores. The mini tart size molds are the perfect size for most breads.
