Spring is near and we are excited about the return of Cadbury Mini Eggs. I feel like Easter is the best time of year for candy! Besides Cadbury eggs, we love hollow chocolate bunnies!!

These mini cheesecakes decorated with Cadbury Mini Eggs make a cute little nest and a perfect bite-size Easter dessert treat. They are made with a layer of graham cracker crust.
The cheesecake batter is easy and creamy using only a few ingredients. A rich, creamy chocolate ganache is topped with toasted coconut and a Cadbury Mini Egg.
What type of Egg Bite Mold do I need?
Heavy duty egg bite mold with a silicone lid is recommended. This egg bite mold is what I use for all my recipes. It is important to have one that is heavy duty because your items will come out better.
Avocado oil or cooking spray is best before putting anything in them. I really like this Egg Bite Mold on Amazon because it is premium quality, and includes a silicone lid.
Can I put the LID of my Egg Bite Molds in the Instant Pot?
Yes, only if it is made of silicone. The egg bite mold is made of silicone, so if your lid is also made of that, you can put it in the Instant Pot.
I recommend lightly putting the lid on your egg bite molds because it is mainly used to keep all the moisture out. I prefer using it over foil. If you have a plastic lid, it can only be used for storage such as freezing items such as baby food.
How do I know if my lid is plastic or silicone?
If your lid will bend over and touch the other side easily, then it is silicone. If it is stiff and not bendable, then it is plastic.
Cadbury Cheesecake Bite Ingredients:
- cream cheese
- granulated sugar
- egg
- vanilla
- graham crackers
- butter
- semi-sweet chocolate chips
- heavy cream
- shredded coconut
- Cadbury mini eggs
How to make Instant Pot Cadbury Mini Cheesecake bites:
Prepare. This recipe will make 7, 1 tray of mini cheesecakes. Spray your tray with cooking spray and sit aside.
Stir. Mix softened cream cheese and sugar together. Then add egg and vanilla and mix until well combined. Pour cheesecake into the tray about 3/4 full.
Mix. Crush graham crackers and add a tablespoon of sugar and melted butter. Mix until well combined. Using a spoon, scoop into each tray covering the cheesecake.
Cook. Place 1 cup of water in the Instant Pot. Lower the trivet inside and place the egg bite mold on top. Cover with a silicone lid (not plastic) or foil. Pressure cook for 20 minutes with a NPR (natural pressure release).
Cool. Once complete, allow to cool before removing from the tray.
Remove. When cooled, put a plate on top and flip over gently and push the egg bite mold until all cheesecakes have been released.
Toppings. Top cheesecakes with a ganache (mixing the chocolate chips and heavy cream). Then toast the coconut and place on next with a cadbury egg on the top. Serve. Refrigerate until ready to serve.
