Cheesy Chicken, Broccoli and Rice

This dish includes everything you need for your meal! It gives you the meat, rice and veggie with a garlic flavor to top it off.

I cook the broccoli with the rest of the food, if you prefer not to have it as soft, just add it in afterwards. Just cover with the lid and let sit for 10 minutes, especially if it is fresh broccoli which is best!

This recipe is similar to Chicken Teriyaki Bowls, which is so flavorful and delicious!

Ingredients needed:

1/2 lb broccoli, cut into small/medium florets

• 1 1/2 c uncooked white rice

• 1 1/2 C. water

• 4 c chicken broth

• 1/2 C. shredded cheddar cheese

• 1/2 tsp garlic powder

• 1/2 tsp salt, or more to taste

• 2 Tbsp butter

• 1 1/2 lb chicken

• 1 lb broccoli

How to make cheesy chicken, broccoli and rice:

Step 1:

Turn your Instant Pot to the saute setting. Melt the butter. Once butter is melted add in the onion. Saute the onion for a few minutes. Add in the garlic and rice and stir for another minute. Add in 1 cup of the broth and stir for a couple minutes. Add in the remaining broth, the salt and then lay the chicken on top.

Step 2:

Cover the pot and secure the lid and seal. Pressure cook for 10 minutes. Once complete, let sit there for 10 minutes and then perform a quick release.

Step 3:

Using fresh broccoli florets, add to the pot and let the broccoli cook on the warm setting with the lid on for about 20 minutes.

Step 4:

Remove the chicken and shred. Then stir back into the pot. Stir in the cheddar cheese, salt and pepper. Scoop into bowls and enjoy.

Cheesy Chicken, Broccoli & Rice

  • 2 c uncooked long grain white rice (Jasmine is delicious )
  • 2 chicken breasts (fillets )
  • floret of fresh broccoli
  • 4 c chicken broth
  • 1 c shredded cheddar cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (optional )
  1. Add your chicken to the pressure cooker. Followed by your chopped broccoli, rice, and broth.

  2. Sprinkle your garlic powder and salt on top.

  3. Cover the pressure cooker and set for 8 minutes with a 5 minute NPR.

  4. Remove chicken from pressure cooker and shred.

  5. Add the chicken back in and lightly toss.

  6. Add the shredded cheese and lightly toss.

  7. Serve in bowls with some extra shredded cheese on top.
