These cheesy chicken quesadillas include simple ingredients that you can put together in a snap! One of my favorite meals to order at the local Mexican restaurants is chicken quesadillas. I always ask for the shredded chicken with peppers and onions. I like to serve this with authentic Mexican Rice.
Ingredients needed to make this is coke, 2 chicken breasts, salsa, brown sugar and taco shells.
How to make Cheesy Chicken Quesadillas
Step 1: Place the chicken breast and 1 cup of cola into the Instant Pot.
Step 2: Cook on manual High Pressure for 9 minutes. Allow for 6 minute NPR. Remove chicken and shred.
Stwp 3: Pour out liquid in the pressure cooker. Mix 1/4 c cola, salsa and brown sugar in the pressure cooker. Turn on the Sauté button on Low and simmer until the brown sugar has completely dissolved and thickened.
Step 4: Add the chicken and to the sauce.
Step 5: Spoon chicken onto soft taco shells and add fiesta shredded cheese (melted). Place other shell on top. Cut or fold over and enjoy!

- 1/4 c brown sugar
- 2 c shredded fiesta cheese
- soft taco shells
