This Instant Pot Chicken and Stuffing recipe includes seasoned chicken with scrumptious stuffing and vegetables. Serve it casserole style or with gravy and mashed potatoes.
I think I’ve made this so many times, therefore I’m sure I could do it my sleep. Ha! A perfect meal for anyone who’s busy and needs a quick dump and go dinner.
Sour Cream Substitutes
If you do not like sour cream or need a substitute for health reasons, in other words, you may use:
- Plain Greek Yogurt
- Mayonnaise
- 1 cup evaporated milk + 1 tablespoon vinegar or lemon juice. Let stand 5 minutes to thicken.
In addition, other Vegetable Options Include: Carrots, Broccoli, Corn, or even Baby Potatoes.
What is the PIP, Pot in Pot method of instant pot cooking?
First, when cooking a thicker meal such as this one or chili, you can use the PIP method of cooking. It allows you to cook without your meal being overly saturated with too much water or liquid. You will not receive the dreaded “burn” notice with this method either. However, it does take a bit longer so let me explain.
As you can see in the picture below, I use a 3qt pot inside the 6qt. In order to do this I put 1 cup of water in the bottom of the 6qt pot, then place the trivet inside with the 3qt pot on top.
Just fill the 3qt with all the ingredients. I used the Pot in Pot (PIP) method because this is a very thick meal that can give you a burn notice easily if not using the PIP method.
On Amazon, I purchased this 3qt insert for under $12 and it works great especially for meals such as this one. This is the non-stick inner cooking pot. You can also purchase the stainless steel one for under $20.
When using the PIP method it takes a bit longer to cook your food thoroughly, but it’s totally worth it. With this recipe, 27 minutes with 10 minutes NPR worked perfectly using the non-stick insert.
In conclusion, I could make anything in the Instant Pot. For instance, my grandmother’s thick chili that has barely any liquid because it is so thick.
Can I add my green beans in last?
Yes! Most importantly, make this recipe the way you would like it. The green beans will be cooked soft with the recipe, but if you are wanting a little more al dente, then you could cook them separately and leave them out of the pressure cooking process all together.
Chicken & Stuffing Ingredients:
- chicken breasts
- garlic salt
- cream of chicken soup
- Stove Top Stuffing chicken
- frozen green beans
- sour cream
How to make Chicken & Stuffing:
- PIP. Using the Pot in Pot method, place the chicken strips in the pot.
- Add. Add the garlic salt on top and then pour in the water.
- Mix. In a small bowl, mix together the cream of chicken and sour cream. Spread on top of the chicken.
- Add. Pour the box of Stove Top stuffing on next. Add the green beans on top.
- Cook. Pressure cook for 27 minutes with a 10 minute NPR using the Pot in Pot method.
- Serve. Once complete, spoon out on plates and enjoy!
