Quick, easy and delicious Instant Pot Chicken Salad Sandwiches are a crowd pleaser with only four ingredients.
These chicken salad sandwiches are so easy to make!! I like to make a big bowl of this and eat it for lunch throughout the week. It is also incredibly delicious on Hawaiian rolls and served as an appetizer. We’ve had it for dinner with chips and fruit.
I made enough to feed 50 guests at an Anniversary gathering and it was a hit! The possibilities are endless. I used regular white and wheat bread and sliced them into fourths. This made it look like there were tons and it was the perfect appetizer size.
The recipe below is for 4-6 people, and you could easily double the recipe. When I cook a large amount, it’s perfect refrigerated. Just grab a scoop and place it on your favorite bread and lunch is ready. Just add a couple sides.

Chicken
Celery
Grapes
Miracle Whip or Mayo
How to make Chicken Salad Sandwiches:

Add chicken broth and chicken breasts to the instant pot.

Cook chicken breasts on high pressure for 8 minutes and NPR.

Shred chicken and add the miracle whip, celery and grapes.

Refrigerate overnight and make sandwiches!! Enjoy!

- 2 c miracle whip
- 2 c red grapes chopped
- 2 c pecans *optional
- 2 c chicken broth
