A quick and easy hearty dinner with so much flavor, try this chicken tortilla soup in the Instant Pot!
This recipe is a winner because it is not only budget friendly but also super simplistic. It is a dump and go recipe with just adding the cheese and chips at the end.
If you prefer vegetarian style without the chicken, just add a couple more cans of beans. If you prefer a different topping, you could add sour cream, avocado, green onion, hot sauce or even fresh lime.
Ingredients needed:
boneless chicken breasts cut into strips
black beans
diced tomatoes with green chilies
onion
corn
chicken broth
Chili powder
Taco Seasoning
Garlic Salt
tortilla chips
shredded cheese
How to make Chicken Tortilla Soup:
1. Add the chicken cut into strips to the Instant Pot. Next, add the chicken broth and seasonings.
2. Add the black beans, corn and tomatoes with green chilies next. Do not stir. Push down gently with a spoon.
3. Pressure cook on high pressure for 20 minutes with a 10 minute NPR.
5. Remove and shred the chicken. Place back into the Instant Pot and stir.
6. Scoop into bowls and add shredded cheese and crushed tortilla chips on top.

- 1 can of of corn
- 2 1/2 cups of chicken broth
- 1 Tsp Chili powder
- 1 Tsp of Taco Seasoning
- 1 Tsp of Garlic Salt
- Salt to taste
