This delicious version made with Rhodes Rolls is so good, you’ll have it on repeat! You can use any variety of cheese, but prefer Parmesan cheese as I think it gives it a better taste.

Boneless/skinless chicken tenders or breasts work the best in this recipe. If I use chicken breasts, I usually cut them into strips because they tend to shred better. If you use frozen chicken, I usually add about 5 minutes to the cook time to make sure its cooked thoroughly.

chicken tenders
chicken broth
cream cheese
chopped bacon bits
dry ranch seasoning mix
shredded Parmesan cheese

How to make Instant Pot Crack Chicken Bites/Sandwiches:
- Cook 6-7 boneless chicken tenders and 2 cups of chicken broth in the Instant Pot for 6 minutes with 6 minutes NR. When complete shred in a small bowl.
- Mix the shredded chicken, cream cheese, bacon bits, ranch seasoning and Parmesan cheese until well combined.
- Flatten each roll before scooping 1-2 tbsp of filling into the center of the roll. Fold the edges of the roll up and seal the dough around the filling.
- Arrange the uncooked Crack Chicken Bites on a greased 9×13 pan.
- Set the pan on the stove top while the oven preheats to 450°.
- Once the oven is heated, bake the Crack Chicken Bites for 10-12 minutes or until golden brown.
- Brush with butter and enjoy!
How to make Crockpot Crack Chicken Bites/Sandwiches:
Ingredients:
3 chicken breasts
1/2 cup chicken broth
2 oz ranch seasoning
8 oz bacon (cooked + crumbled) or bacon bits
1 cup cheddar or Parmesan cheese
Rhodes rolls or buns
Instructions:
1. Add chicken, broth, ranch, and cream cheese to a crockpot. Cook on high for 3 hours or low for 6 hours.
2. Take chicken out, shred it with a fork or blender, and return to the crockpot.
3. Add bacon and cheese. Stir to combine.
4. Serve on sandwich buns or insert in Rhodes rolls and bake at 375 degrees for 9-10 minutes.

If you like spicy, a little hot sauce will give you just the right kick. Use 1-2 Tablespoons of your favorite hot sauce in this dish.

Yes! I have made these little bites multiple times on Sunday. I store them in a container in the refrigerator and I just pop them out for lunch or add in the lunchbox during the week. It just takes a few seconds and its the perfect lunch!
