What you need to make Easy Enchiladas
- ground beef
- chunky salsa
- red enchilada sauce
- flour tortillas
- shredded Mexican cheese
How to make these weeknight Enchiladas
Preheat the oven to 350°F and lightly spray a 9×13-inch baking dish with cooking spray.
Brown the ground beef, drain and mix in the salsa.
Pour about 1/2 of the enchilada sauce in the bottom of the prepared baking dish. Fill each tortilla with salsa-beef mixture, cheese, roll-up and place in the dish.
Cover tortillas with leftover enchilada sauce and sprinkle on remaining cheese.
Tightly wrap the dish with aluminum foil and bake for 30 to 35 minutes.

- 8 (8-inch) flour tortillas
- 1 (8-ounce) shredded Mexican cheese
