These Instant Pot French Dip Sandwiches are rave worthy! The meat is cooked until it is falling apart soaking up all the juices and becomes melt-in-your-mouth tender.
WHAT IS A FRENCH DIP SANDWICH?
The classic French Dip Sandwich is a hot sandwich with tender thin slices of beef layered on a French roll, often with melted cheese, then dipped in a flavorful sauce made from the juices called “au jus,” French for “with broth” or “with juice.”
This Instant pot french dip recipe is so tender and delicious. My family loves this meal and the Instant pot makes it so easy to enjoy.
This is absolutely my favorite dipping sandwich in the whole wide world. Give me roast beef, cheese, and onions on a toasted buttery bun with a bowl of salty gravy and I’m happy!
If I had to pick a preferred protein, it would totally be beef or sometimes chicken depending on the day. I love a good juicy steak, a big cheeseburger, fall-apart pot roast, and scrumptious meatballs on my spaghetti.
This Instant pot French Dip recipe is family favorite and we enjoy it year round. My mouth is watering just thinking about these sandwiches.
My family loves these so much I have to use two Instant pots during the holidays to make sure we have enough to feed everyone. The left overs are just as amazing. Pile that juicy beef on a ciabatta toasted bun smothered with gooey cheese then dunk in au jus flavor making it the most delicious bite ever!
DO I NEED TO SEAR THE ROAST?
We highly recommend searing the roast. It cooks the outer surface of the meat at a high temperature so it caramelizes the roast and forms a crust. This gives it a ton of flavor, which we want.
DOES IT REALLY NEED TO BE COOKED FOR 100 MINUTES?
YES! Chuck roast is a tougher cut of meat so we highly recommend cooking it for that long. This will make it fall apart tender and you will love it!
LEFTOVERS
- Allow meat to cool and then place leftover meat in an airtight container and place in the refrigerator. Leftovers will last 2-3 days.
- To freeze leftover meat allow meat and au jus to cool. Then place in a freezer safe container and store in freezer for up to 2 months. When you are ready to use it let it thaw in the refrigerator overnight and reheat on the stove in a saucepan on the stovetop.
Instant Pot french dip sandwiches are super easy to make. The beef is pull-apart tender and full of incredible flavor. Topped with melty cheese, it feels like you’re in a dream as it’s dripping with au jus!

If you are in the market for something new, I really love this Instant Pot. The great thing about this is you can brown the meat for recipes that call for that.
It is so handy to just have the one pan to clean. It has become my favorite kitchen appliance.
If you are looking for a more budget friendly version that is not Instant Pot brand, this one is also a great option.
My favorite feature is that you can put this plastic silicone cover on it. This is fantastic for when you need to store the leftovers and don’t want to use another dish.

I use meat claws, but you could also use 2 forks or a mixer. Meat claws are so handy and make shredding meat so easy. They can be used for shredding chicken or other kind of meat.
