This easy Frito pie recipe is going to be one of your new favorite weeknight dinner recipes! It’s quick and tasty to whip up in the Instant Pot. Add sour cream, chopped green onions, and guacamole if desired and dinner is served.
Frito Pie Ingredients needed: (the exact measurements and full recipe instructions are below in the printable recipe card)
ground beef or turkey
taco seasoning
diced onion
long grain white rice or Jasmine rice
mild enchilada sauce
chili beans
sharp cheddar cheese
Frito chips
diced green onions (optional)
How to make Frito Pie:
Saute the ground beef/turkey and break it up. Add in the taco seasoning. Add in the diced onion. Brown the meat. If there is excess grease, drain it off.
Stir in the water and scrape the bottom of the pot to make sure nothing is sticking. Add in the rice on top. Pour the enchilada sauce over the rice, then dump the beans on top. Do not stir.
Pressure cook for 5 minutes with a quick release. Remove the lid.
Stir in the cheddar cheese. Scoop into bowls and top each bowl with Fritos and green onions. (Sour cream is optional.) Enjoy!

- 1/2 c long grain white rice or jasmine rice
- 1 (10oz) can mild enchilada sauce
- 1 (15oz) can chili beans
- 1 c shredded sharp cheddar cheese
- 2 c Fritos
- diced green onions (optional)
- sour cream (optional)
