Kentucky Derby Day Pie
Instant Pot Derby Pie Bites were a hit the first time I made them. Everyone seems to love the delicious flavors and they are the perfect little bite size minis using the egg bite mold. What a fun little dessert or treat for everyone to enjoy especially during Derby season.
These little dessert bites are also perfect at Thanksgiving because they are so good. In fact, they’ve become an appetizer everyone looks forward to.
I know historically, the original pie is made for the Kentucky Derby in May. Being from Kentucky, I am very familiar with the Derby. We sometimes get together with family to watch the big race, enjoy appetizers and the kids play fun games like racing their stick horses.
These Kentucky Derby Pie Bites are so easy to make and is basically a chocolate chip pecan cookie in a pie shell. I mean, how could that not be delightful? They are creamy and rich bites, so one or two little bites will go a long way.
Some people prefer to switch out the pecans for walnuts and add a little Kentucky Bourbon if you wish, but just know that it’s delicious without it as well.
Does These Bites Need to Be Refrigerated?
Yes, since they contain dairy products, it shouldn’t sit out at room temperature for more than two hours. It will last up to one week in the refrigerator.
Can These Bites Be Made Ahead?
Yes, you can make them several days in advance and store it in the refrigerator. On the day of your event, simply place them on a cookie sheet and reheat it in the oven, covered with foil at 350 for about 5-10 minutes or until it is heated throughout.
WHAT TYPE OF EGG BITE MOLD DO I NEED?
You will also need an egg bite mold for your Instant Pot for this recipe. I recommend one that has a silicone lid. If you have one with a silicone lid, then you can put it in the Instant Pot. If yours is plastic, it cannot go in the Instant Pot. Lightly place the lid on them mainly to keep the moisture out.
I recommend a heavy duty egg bite mold with a silicone lid. The egg bite mold can be used for numerous recipes. It is important to have one that is heavy duty because your items will come out better. I still use avocado oil or cooking spray before putting anything in them.
These Egg Bite Molds on Amazon from the Insta Extras are premium quality, comes in a 2 pack and includes a plastic and silicone lid. I am not endorsed by them, however they are just the ones that I recommend that I have found to be among the best at a reasonable price.
CAN I PUT THE LID OF MY EGG BITE MOLDS IN THE INSTANT POT?
Yes, only if it is made of silicone. The egg bite mold is made of silicone, so if your lid is also made of that, you can put it in the Instant Pot. I recommend lightly putting the lid on your egg bite molds because it is mainly used to keep all the moisture out.
I prefer using it over foil. If you have a plastic lid, it can only be used for storage such as freezing items such as baby food.
HOW DO I KNOW IF MY LID IS PLASTIC OR SILICONE?
If your lid will bend over and touch the other side easily, then it is silicone. If it is stiff and not bendable, then it is plastic.
Ingredients needed to make Instant Pot Derby Pie Bites:
1/4 c butter
1/2 c sugar
1/4 c flour
1 egg
1/2 tsp vanilla
1/3 c chocolate chips
1/2 c chopped pecans
Crust
3 tbsp graham crackers
2 tbsp butter
How to make Derby Pie Bites:
In a mixing bowl, combine butter, sugar, flour, egg, and vanilla.
Add chocolate chips and pecans and mix until well blended.
Spoon into egg bite mold filling about 3/4 of each mold. In a small bowl, combine graham cracker crumbs and butter. Spoon over each egg bite mold.
Pour 1 cup of water into the Instant Pot. Place egg bite mold on the trivet.
Pressure cook for 35 minutes with a 10 minute natural pressure release.
Once complete, let sit for about 10 minutes before removing from mold.
