Instant Pot Pumpkin Donut Bites are such an incredibly delicious fall breakfast. Of course, what would a donut hole be without it being rolled in cinnamon sugar? So, obviously, these needed that added touch of goodness.
As October is coming to an end, it seems like everything is pumpkin spice. I’m not a crazy fan of just pumpkin, but when it comes in the form of a donut hole and has cinnamon then it’s a win.
These little bites are made in a silicone egg bite mold. These are much like a muffin, but their shape and cinnamon-sugar topping is much like a donut holes.
They’re so fluffy and moist, which is not always the case when prepared in a pressure cooker. These Instant Pot pumpkin spice donut holes recipe is a great choice for dessert or even a sweet breakfast.
TIPS FOR MAKING FLUFFY BAKED TREATS IN THE INSTANT POT
Baked type items prepared in the Instant Pot are really just cooked with hot steam unlike the oven. Sometimes cakes and breads will end up dense. To get that desired texture like the oven, try these tricks:
Do not pack down the flour when measuring.
Use plain, unsweetened Greek yogurt as this replaces your oil and butter.
WHAT TYPE OF EGG BITE MOLD DO I NEED?
You will also need an egg bite mold for your Instant Pot for this recipe. I recommend one that has a silicone lid. If you have one with a silicone lid, then you can put it in the Instant Pot. If yours is plastic, it cannot go in the Instant Pot. Lightly place the lid on them mainly to keep the moisture out.
I recommend a heavy duty egg bite mold with a silicone lid. The egg bite mold can be used for numerous recipes. It is important to have one that is heavy duty because your items will come out better. I still use avocado oil or cooking spray before putting anything in them.
These Egg Bite Molds on Amazon from the Insta Extras are premium quality, comes in a 2 pack and includes a plastic and silicone lid. I am not endorsed by them, however they are just the ones that I recommend that I have found to be among the best at a reasonable price.
CAN I PUT THE LID OF MY EGG BITE MOLDS IN THE INSTANT POT?
Yes, only if it is made of silicone. The egg bite mold is made of silicone, so if your lid is also made of that, you can put it in the Instant Pot. I recommend lightly putting the lid on your egg bite molds because it is mainly used to keep all the moisture out.
I prefer using it over foil. If you have a plastic lid, it can only be used for storage such as freezing items such as baby food.
HOW DO I KNOW IF MY LID IS PLASTIC OR SILICONE?
If your lid will bend over and touch the other side easily, then it is silicone. If it is stiff and not bendable, then it is plastic.

Instant Pot Pumpkin Spice Donut Bites
These little bites of fluffy pumpkin spice coated with cinnamon sugar will have you coming back for more.
Ingredients
- 1 c water
- 1 1/2 c all-purpose flour
- 1 c sugar (divided)
- 2 tsp pumpkin pie spice (divided)
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 c pumpkin puree
- 1/2 c plain unsweetened Greek yogurt
- 1/2 c butter melted (divided)
- 1 egg
- 1/2 Tbsp cinnamon
Instructions
In a medium bowl, mix flour, 1/2 c sugar, 1 teaspoon of pumpkin spice, baking powder, baking soda and salt together.
In a large bowl, mix together pumpkin puree, yogurt, 1/4 cup butter and egg.
Add the dry mixture to the wet ingredients until completely combined.
Spray two egg bite molds with cooking spray and fill them up about halfway with batter. Cover the molds with a silicone lid or paper towel and then foil.
Add one cup of water to the Instant Pot. Stack the molds on top of each other on a trivet.
Pressure cook for 12 minutes with a natural pressure release.
Once complete and cooled, pop out the bites.
In a small bowl, mix 1 teaspoon of pumpkin pie spice and cinnamon.
Roll each donut bite in 1/4 cup of melted butter and then in the cinnamon sugar mix. Enjoy!
