Italian Chicken Pasta is a great meal for anytime of the year and it’s an all in one dump and go recipe. It has great flavors that are refreshing and so scrumptious! This would be great for a weeknight meal or even for a special occasion.
Before my husband and I had kids, one of our favorite places to eat out was Italian. Three kids later, we do not eat out nearly like we used to. If we do, it’s usually pizza or fast food because life is busy and never stops. I wouldn’t have it any other way. I bring the Italian to our table instead with this simplistic yet delicious meal.
What is the perfect side? We love Italian salad and breadsticks! I usually grab a garden salad and mix in some diced tomatoes, Italian croutons, and parmesan cheese topped with Italian dressing. Sometimes we grab deli breadsticks and add a bit of butter and garlic to them.
Italian chicken pasta ingredients needed:
2 boneless skinless chicken breasts cut into slices
chicken broth
onion
red bell pepper
dried minced garlic
Italian Seasoning
diced tomatoes
pasta (I use Rotini)
Mozzarella cheese

Italian Chicken Pasta
Italian Chicken Pasta is very flavorful and light, perfect weeknight meal or for a special occasion.
Ingredients
- 2 boneless skinless chicken breasts cut into slices
- 3 c chicken broth
- ½ onion sliced
- 1 red bell pepper sliced
- 2 teaspoon dried minced garlic
- 1 teaspoon salt
- 2 tsp Italian Seasoning
- 1 can diced tomatoes 14 oz
- 16 oz package of pasta rotini is our favorite
- 1 cup Mozzarella cheese shredded
Instructions
1. Add chicken and broth to the pressure cooker.
2. Add the seasonings; salt, pepper, Italian seasoning and garlic.
3. Pour in the tomatoes on top.
4. Add pasta.
5. Gently submerge pasta into the liquid.
6. Add the sliced onions and peppers on top.
7. Pressure cook for 10 minutes with a 5 minute natural pressure release.
8. Scoop into bowls and enjoy.
