Instant Pot Mini Meatloaf Bites
This recipe is so delicious and I love how they come in mini size. The topping on the meatloaf is simple and the meatloaf is perfectly seasoned. You can even make baked potatoes at the same time in the same pot! My family usually prefers mashed potatoes, which is also fantastic to make in the Instant Pot.
This recipe makes 7 mini meatloaf bites. We have 5 people in our family so I always double the recipe. I just stack 2 egg bites molds on top of each other and it’s incredibly easy.
WHAT TYPE OF EGG BITE MOLD DO I NEED?
My FAVORITE Instant Pot accessory is the egg bite mold. You will need an egg bite mold for your Instant Pot for this recipe. I recommend one that has a silicone lid. If you get one with a silicone lid, then you can put it in the Instant Pot. If yours is plastic, it cannot go in the Instant Pot. Lightly place the lid on them mainly to keep the moisture out.
I recommend a heavy duty egg bite mold with a silicone lid. It can be used for numerous recipes. However, it is important to have one that is heavy duty because your items will come out better. Most importantly, I would use avocado oil or cooking spray before putting anything in them.
These Egg Bite Molds on Amazon from the Insta Extras are premium quality, comes in a 2 pack and includes a plastic and silicone lid. I am not endorsed by them, they are just ones that I recommend that I find to be among the best at a reasonable price.
CAN I PUT THE LID OF MY EGG BITE MOLDS IN THE INSTANT POT?
Yes, only if it is made of silicone. The egg bite mold is made of silicone, so if your lid is also made of that, you will be able to put it in the Instant Pot. I recommend lightly putting the lid on your egg bite molds so that it will keep all the moisture out.
I prefer using it over foil. If you have a plastic lid, it can only be used for storage such as freezing items such as baby food.
HOW DO I KNOW IF MY LID IS PLASTIC OR SILICONE?
If your lid will bend over and touch the other side easily, then it is silicone. If it is stiff and not bendable, then it is plastic.
What Should I Serve With Instant Pot Meatloaf Bites?
Can you ever really go wrong with having some type of potato as a side. You can cook baked potatoes at the same time in the same pot. Place the potatoes of the same shape and size in a single layer on the trivet. Then place your mini meatloaf bites in the egg bite mold on top of the potatoes. Lower the trivet with the potatoes and meatloaf carefully into the pot.
A veggie is also a great side such as green beans, broccoli or corn.
What Equipment Do I Need?
- Pressure Cooker: I have a few Instant Pots because I just love cooking with them. If I was recommending one to a friend, I would tell them to grab the 6qt Instant Pot.
- Trivet: Many pressure cookers come with a trivet, but if you do not have one, I recommend
- Egg bite mold: Choose a 2-pack egg bite mold as it’s more practical for doubling recipes unless you are cooking for 1-2, then just one would suffice.
What ingredients do I need for Mini Meatloaf Bites?
- ground beef
- cracker crumbs
- eggs
- onion powder
- garlic salt
- Italian seasoning
- ketchup
How to make Instant Pot Mini Meatloaf Bites:
- Mix. This recipe is for 2 egg bite molds. In a large bowl, mix together all the ingredients except ketchup. Grease egg mold and sit aside.
- Fill. Once the meatloaf bites are mixed, fill each compartment of your egg mold container. This is enough for 2 molds.
- Prepare. Pour 1 1/2 cups of water in the IP. Cover lightly with silicone lid. Arrange on a trivet off center so that the cups are not resting over each other.
- Pressure Cook. Close the lid and turn the pressure valve to sealing. Cook on high pressure using manual for 25 minutes. When done release the pressure using the quick release method.
- Topping. Remove and arrange them on a cooking sheet. Put ketchup on top. Broil them for 3 minutes.
- Serve. Let the meatball bites rest a couple minutes before serving.
