This is a fun healthier Instant Pot meal. You can use feta cheese crumbles on top if you choose. A one pot meal with chicken, rice and Mediterranean flavors!
This Instant Pot Mediterranean chicken and rice is SO easy and perfect for your weekly lunches in about half an hour! Prepare on Sunday for less than an hour and you get a ton of veggies and essential vitamins and nutrients in for a healthy meal that you can have for the week.
Are you busy on weeknights? This would also be a great option anytime. The flavors in the sauce are so simple and you probably already have most ingredients on hand in your pantry.
So how do you make Mediterranean Chicken? The secret sauce is incredibly simple! Just a combination of the following:
- olive oil
- lemon juice
- garlic
- oregano
- parsley
Add some feta cheese on top along with the veggies and this Instant Pot Mediterranean Chicken comes together beautifully!
How to Make Greek Chicken in Your Instant Pot
With this recipe being a dump dinner, you are going to dump everything in. You’ll add your olive oil, onions, chicken and then the spices/seasonings, chicken broth and rice. Try not to mix it as it allows space between the items and you can mix once pressure cooking is complete.
Add the dry rice last on top of the chicken and other liquids. The rice should be almost floating on top to ensure you do not get the dreaded burn notice if the rice ends up being on the bottom.
Pressure cook for 6 minutes (I recommend cooking chicken for at least 6 minutes) and then you’ll do a 6 minute natural pressure release, remove the lid and stir in your veggies.
This recipe calls for zucchini and bell peppers since they cook faster when sitting on top of the rice and chicken mixture. If you prefer spinach and broccoli, that also goes well with this Instant Pot Mediterranean Chicken. Your veggies will get steamed just from sitting in the hot ingredients for 5 minutes, so you definitely don’t want to pressure cook them and risk them getting overcooked. If they have a bit of a crunch, they are perfect.
Can I use cauliflower rice for low carb Instant Pot Mediterranean Chicken?
Yes, to eliminate the white rice you can use cauliflower rice. If you want more protein add less rice and more chicken. You could also use water instead of broth or half and half. Stir in your veggies and cauliflower rice at the end and let sit for 5-10 minutes just like the rice.
Add parsley and feta cheese at the end on top and enjoy!
