Pineapple Casserole is sweet, savory and a buttery topping that will have your taste buds dancing.
This dish is perfect for a holiday side dish or sweet enough for a dessert. Every time I make this and bring it to a new event, someone asks me for the recipe. They usually come back for more because it’s just that good.
If you’ve never tried it, you may be thinking how unsure you are to even try it. At first, I also thought it may be one of those that you try once. Trust me, it’s going to be on repeat especially through the holiday season. What’s great is, since it’s pineapple it fits right into summer too.
What makes this recipe an unexpected yummy dish is the creamy cheese which pairs wonderfully with pineapple. The layer of buttery Ritz crackers is like the icing on the cake.
Items needed to make this spectacular dish:
Canned Pineapple: I usually use 2 cans of tidbits, but once I used a can of tidbits and a can of crushed and it turned out fantastic!
Sugar
Sharp Cheddar Cheese: I like the taste of sharp, but I have also used mild, whichever you have on hand.
Ritz crackers: You can also use butter crackers, but I just love the taste of Ritz. They are not sponsoring this, just my honest opinion.
Flour
Butter: My favorite to use is Kerrygold, but any type of real butter is fine.
How to make Pineapple Casserole
Heat oven to 350 degrees. In a medium bowl, combine the pineapple, sugar, flour, cheese and 1/4 c reserved juice. Mix and pour into 9×13 baking dish.
In a small bowl, mix together the crushed crackers and melted butter. Sprinkle evenly over pineapple mixture.
Bake in the oven for about 30 minutes or until top of casserole is golden brown.
Can I Make ahead or Store the leftovers?
If you want to make ahead, you may up to 3 days in advance. Just reheat right before. You can also store leftovers for up to 3 days. To reheat, just place in a microwave safe bowl and heat until warmed through.

- 2 20oz cans pineapple tidbits with 1/4 cup juice reserved (or 1 can tidbits and 1 can crushed)
- 3/4 c sugar
- 6 tbsp flour
- 2 c shredded sharp cheddar cheese
- 2 c Ritz crackers (crushed)
- 1/2 c butter (melted)
