Instant Pot Blueberry banana oatmeal bites are a perfect little breakfast snack! Or even a midday snack with some yogurt.
Do you need a quick breakfast? These are great to pop in the Instant Pot while you are getting ready to head out the door. Then they are ready to pull out and eat before you have to go.
I use real blueberries, so it’s great if you can get them in the right season. They will ooze just a little, but it goes smoothly with the banana and oatmeal.
Using the egg bite mold, make sure it is sprayed with cooking spray. You will want to divide the batter into the prepared compartments. Set IP for 12 minutes and natural pressure release.
HAT TYPE OF EGG BITE MOLD DO I NEED?
You will need an egg bite mold for your Instant Pot for these recipes. I recommend one that has a silicone lid. If you get one with a silicone lid, then you can put it in the Instant Pot. If yours is plastic, it cannot go in the Instant Pot. Lightly place the lid on them mainly to keep the moisture out.
I recommend a heavy duty egg bite mold with a silicone lid. It can be used for numerous recipes. However, it is important to have one that is heavy duty because your items will come out better. Most importantly, I would use avocado oil or cooking spray before putting anything in them.

CAN I PUT THE LID OF MY EGG BITE MOLDS IN THE INSTANT POT?
Yes, only if it is made of silicone. The egg bite mold is made of silicone, so if your lid is also made of that, you will be able to put it in the Instant Pot. I recommend lightly putting the lid on your egg bite molds so that it will keep all the moisture out.
I prefer using it over foil. If you have a plastic lid, it can only be used for storage such as freezing items such as baby food.
HOW DO I KNOW IF MY LID IS PLASTIC OR SILICONE?
If your lid will bend over and touch the other side easily, then it is silicone. If it is stiff and not bendable, then it is plastic.

Fresh Blueberries: preferably use when in season, but you may use frozen if not in season or raspberries.
Egg
Rolled Oats: Old fashioned oats are the ones that I prefer in this recipe.
Banana: The added sweetness brings everything together smoothly.
Brown sugar: You could leave this out for a healthier version, but I like the added touch of yumminess.

How to make these yummy bites in the Instant Pot
Step 1: Using an egg bite mold, grease it with avocado spray and set aside.
Step 2: In a medium bowl, mash banana with a fork. Then beat in the egg and add rolled oats, baking powder, brown sugar and vanilla mixing well. Gently stir in the blueberries.
Step 3: Divide the batter into the prepared compartments. Add one cup of water to the pressure cooker. Set pressure cooker for 12 minutes with a natural pressure release.
