Instant Pot Double Chocolate Chip Muffins are the perfect tasty bite size breakfast that’s quick and kid-friendly.
We love making muffins in our Instant Pot. Busy mornings are much better with an easy breakfast. My daughter likes to eat them as a snack during the day. We have made chocolate chip, blueberry, strawberry, wildberry, chocolate chocolate chip, cinnamon sugar, banana nut and apple cinnamon. Perfect for busy on the go mornings when you need to grab something to eat and go! It’s one of our favorite fast breakfasts.
WHAT TYPE OF EGG BITE MOLD DO I NEED?
You will need an egg bite mold for your Instant Pot for these recipes. I recommend one that has a silicone lid. If you get one with a silicone lid, then you can put it in the Instant Pot. If yours is plastic, it cannot go in the Instant Pot. Lightly place the lid on them mainly to keep the moisture out.
I recommend a heavy duty egg bite mold with a silicone lid. It can be used for numerous recipes. However, it is important to have one that is heavy duty because your items will come out better. Most importantly, I would use avocado oil or cooking spray before putting anything in them.
These Egg Bite Molds on Amazon from the Insta Extras are premium quality, comes in a 2 pack and includes a plastic and silicone lid. I am not endorsed by them, they are just ones that I recommend that I find to be among the best at a reasonable price.
CAN I PUT THE LID OF MY EGG BITE MOLDS IN THE INSTANT POT?
Yes, only if it is made of silicone. The egg bite mold is made of silicone, so if your lid is also made of that, you will be able to put it in the Instant Pot. I recommend lightly putting the lid on your egg bite molds so that it will keep all the moisture out.
I prefer using it over foil. If you have a plastic lid, it can only be used for storage such as freezing items such as baby food.
HOW DO I KNOW IF MY LID IS PLASTIC OR SILICONE?
If your lid will bend over and touch the other side easily, then it is silicone. If it is stiff and not bendable, then it is plastic.
WHAT YOU WILL NEED
Along with your Instant Pot, you will need your egg bite mold and trivet to sit it on. You will just need to choose your muffin mix and 1/2 cup of milk and you are ready to get started.
HOW TO MAKE INSTANT POT DOUBLE CHOCOLATE CHIP MUFFINS
- In a bowl, whisk together the muffin mix and milk.
- Spoon the batter evenly into the greased compartments of the egg bite mold. I would only fill about half or three-fourths of the compartment because they will rise.
- Add a cup of water to the IP.
- Cover with silicone lid or foil. Cook for 10 minutes with Natural Pressure Release.

Double Chocolate Chip Muffins
- Pressure Cooker
- Egg Bite Mold
- 1 c all purpose flour
- 1/4 granulated sugar
- 1/4 c cocoa powder (sifted)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 c vegetable oil
- 1 egg
- 1/4 c milk
- 1/4 c sour cream
- 1/2 tsp vanilla
- 1/2 c semi sweet chocolate chips

In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

In another bowl, whisk together the oil, sugar, egg, milk, sour cream and vanilla.

Add the wet ingredients to the dry ingredients and stir until just combined. Gently fold in the chocolate chips.

Spoon the batter evenly into the greased compartments of the egg bite mold.

Cover with silicone lid or foil. Cook for 12 minutes with NR.
