Do you get overwhelmed by all the egg bite recipes and are just wanting something basic with few ingredients? This is the recipe for you and remember you can always add salt and pepper to taste.

All you need is an egg bite mold and your IP, I use this Melach brand from Amazon.

Making the Egg Bites

The first thing you need to do is grease the egg mold tray and set aside. I always use Pam because I can just spray and go.

Next, mix 4 eggs, 1/4 cup of cheese and 1/4 cup of milk in mixing bowl.

Before pouring this into each compartment, I place chopped bacon into all the compartments and cover it with cheese. The bacon is already cooked. Sometimes I use these Hormel bacon bits for an even faster egg bite!

Then you are ready to pour in the egg mixture! I usually fill them up about 3/4 the way because they will expand a bit.

If you want a different variety, choose one item from each of the 4 selections to create your own egg bite of choice!

To make your own, you will need 4 eggs and one from each category.

1/4 cup cottage cheese, heavy cream, milk, or plain Greek yogurt

1/4 cup soft cheese, like cream cheese, Brie, Feta, Gorgonzola, etc. (optional)

1/4 cup chopped mix-ins, like cooked meats (bacon, sausage, ham) and/or raw or cooked vegetables (spinach, fresh basil, chopped peppers, etc)

1/4 cup shredded cheese, such as cheddar, Monterey jack, pepper jack or mozzarella

Cover your egg bite mold with a silicone lid, not plastic. Add one cup of water to the Instant Pot. Close the lid and seal. Set the Instant Pot to manual high pressure for 9-12 minutes. Let them naturally release for 8-10 minutes and then quick release.

Remove from the Instant Pot and garnish with bacon. Enjoy!!

  2. Mix 4 eggs, ¼ c cheese, and ¼ c milk in a mixing bowl.
  3. Place chopped bacon in the bottom of all the compartments and cover with cheese.
  4. Pour in the egg mixture ¾ full in each compartment.
  5. Cover silicone mold with silicone lid. Add 1 cup of water to the instant pot.
  6. Close the instant pot lid and seal. Close the pressure release valve. Set the instant pot to manual, high pressure for 12 minutes. Let naturally release for 10 minutes and then quick release steam.

Did you pre-cook the bacon or was it raw?
