These Easy Instant Pot Steak Fajitas make the perfect simple weeknight meal! Made with beef, peppers and onions all wrapped up in warm tortillas.
It’s sometimes hard to always find new dishes to bring to the family table. As always, I like to keep it simple and tasty! This one has a handful of ingredients that you can pick up on your way home or add to your weekly grocery list.
I like to cook onions with the meat because it seems to add that flavor needed for flavorful dishes such as this one. You are welcome to add the peppers in with the onions but I prefer them a little more al dente.
Ingredients needed for Steak fajitas:
1 pound steak rump, top round or flank sliced into long strips
1 onion sliced
2 tablespoons fajita seasoning mix 1 cup beef stock
salt to taste
3 bell peppers red, green and yellow – thickly sliced
Tortilla shells
How to make Steak fajitas:
1. Add the meat to the Instant pot, followed by the onion, fajita seasoning, and beef stock.
2. Mix and pressure cook for 10 minutes at high pressure with a quick release.
3. Remove the lid and add the bell peppers. Cover with the lid again, and let the peppers “steam” for a few minutes.
4. Use a slotted spoon to take out the fajitas and stuff warmed tortillas. Drizzle over a little of the reserved sauce.
