Instant Pot Taco Chili

Instant Pot Taco Chili is a flavorful hearty chili perfectly made in the Instant Pot in less than 30 minutes!

Taco Chili brings all the flavors to the table! A great hearty meal all in a bowl with your favorite toppings. Add shredded fiesta cheese, tortilla chips or Fritos to the top. Taco chili is the comfort food you need during the brisk cool days of fall and winter.

It can be ready in no time with very minimal prep time. The only veggie chopping required is an onion. It is truly a dump and go recipe.

If you love Taco Tuesday’s but still want some variety, this Instant Pot Taco Chili is a great recipe to add to your menu during cold weather. It’s also a great potluck recipe and is an easy, affordable way to feed a crowd!

What is the PIP, Pot in Pot method of cooking?

When cooking a thicker meal such as chili, you can use the PIP method of cooking. It allows you to cook without your meal being overly saturated with too much water or liquid. You will not receive the dreaded “burn” notice with this method either.

I use a 3qt pot inside the 6qt. In order to do this I put 1 cup of water in the bottom of the 6qt pot, then place the trivet inside with the 3qt pot on top. Fill the 3qt with all the ingredients. I used the Pot in Pot method because this is a very thick meal that can give you a burn notice easily if not using the PIP method. I purchased this 3qt insert for under $12 and it works great especially for meals such as this one. This is the non-stick inner cooking pot. You can also purchase the stainless steel one for under $20.

Can I add a kick to this recipe?

Yes! You can always make it hotter! Fire-roasted canned ingredients can add a great amount of flavor and depth. If you prefer, you could use southwestern corn which adds a fun twist and additional flavor. You could always add a bit of hot sauce if desired as well.

How to make Taco Chili:

  1. Add. Add beef to the Instant Pot and sauté. The rest of the ingredients except the fiesta cheese. You may use the PIP method to make sure you do not get the burn notice.
  2. Cook. Pressure cook for 14 minutes with a 14 minute NPR.
  3. Serve. Stir and serve in bowls.
  4. Toppings. If desired, serve with shredded fiesta cheese, tortilla chips or Fritos.

Can I make this Taco Chili on the Stovetop or in the Crockpot?

  • Stovetop: brown the ground beef and onion in a skillet over medium heat. Drain off any grease. Add in all of the other ingredients. Stir and allow to simmer over low heat for 30 minutes while stirring occasionally.
  • Crockpot: To make this taco chili in the slow cooker, brown the ground beef and onion in a skillet over medium heat. Drain off any grease and place the meat mixture in the crockpot. Add all the other ingredients. Stir it all together and cover. Cook on high for 3-4 hours or on low for 6-8 hours.

Taco Chili

  • Pressure Cooker
  • 1 lb ground beef
  • 1 small onion
  • 15 oz canned corn (drained)
  • 8 oz tomato sauce
  • 15 oz petite diced tomatoes
  • 4.5 oz green chilis
  • 15 oz black beans
  • 15 oz chili beans
  • 1 c salsa
  • 1 c tomato juice
  • 1 c water
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 4 tbsp taco seasoning
  • 1 c shredded fiesta cheese
  1. Add beef to the Instant Pot and saute. Add in the rest of the ingredients except the shredded cheese and stir.

  2. Pressure cook for 14 minutes with a 14 minute NPR.

  3. Stir and serve in bowls.

  4. If desired, serve with shredded fiesta cheese, sour cream, tortilla chips or Fritos.
