This creamy and flavorful chicken and white beans chili is not only delicious, but also quite a bit healthier than the classic version. I used canned white kidney beans. These tend to do well with the pressure in the Instant Pot.

Yes, I usually add 5 minutes to the cooking time to ensure that the chicken is cooked through.
Can I make this chili ahead of time?
Yes, this chili is great the next day! Leftovers are perfect for lunch or dinner the next day. Simply place the leftovers in a container with lid and keep in the fridge for up to 3 days.
Instant Pot White Chicken Chili Ingredients:
- 3 boneless chicken breasts
- chicken broth
- white kidney beans
- corn
- small onion
- green chilies
- chili powder
- salt
- cream cheese
How to make Instant Pot White Chicken Chili in 6 simple steps:
- Add chicken. Place chicken strips in the pressure cooker. I like to cut chicken into strips because I feel like I can shred it easier afterwards.
- Add flavor and beans. Pour in the chicken broth, beans, corn, chopped onion, green chilies, chili powder and salt. I use regular chili powder, but some like to use the white chili powder. Either one you choose.
- Cover. Push ingredients lightly until submerged in the liquid.
- Cook. Pressure cook on HIGH for 10 minutes with a 10 minute natural pressure release.
- Finish. Remove the chicken and shred and place back into the pressure cooker. You can use 2 forks, a mixer or I love using my shredder claws!
- Serve. Cut up the cream cheese and stir in until melted. Serve into bowls, top with cheese, jalapenos, or topping of choice.

Variations and substitutions for this Chicken Chili recipe:
- Chicken thighs, meat from a rotisserie chicken, ground chicken or turkey can all be substitutions for chicken breasts.
- Just about any beans you have will work for this recipe.
- Green chilies… you do not have to use them, add in Tabasco Green Sauce for an extra punch of flavor.

In the freezer:
Chili is a great freezer meal! It can be frozen up to 3 months before using. You can always make a double portion and freeze for a later date.

It does not make it spicy with the amount used. You are welcome to omit, it would be cooked the same.
